The summer growing season is short but plentiful. This is the time of year to enjoy fruits and vegetables that usually are unavailable during colder months. Summer is peak season for watermelon, blueberries, summer squash, and other luscious foods that can make a salad special. Liven up your usual fare with new flavors that will turn your basic salad ingredients into a memorable meal or side.

mango, fiber, salad, raw, antioxidants

1. Mango

This smooth, juicy fruit packs lots of dietary fiber and an abundance of cancer-fighting antioxidants. Plus, it contains vitamins A and C, as well as beta-carotene and potassium. Mangoes also pack in dietary fiber — 3 grams in one cup of raw mango — adding to their title as a champ in the battle against certain cancers as well as heart disease.

The mango’s sweetness and soft texture make it a good companion for red bell peppers, green onions, and avocados, so it shines in salads with Mexican and Southwestern accents.
