Question: For heart health reasons, I have started a vegan diet. I can’t find information on whether seitan (a wheat protein food) is healthy with a strict vegan diet. Can you give me any advice?

Dr. Blaylock's Answer:

I would not eat seitan with a vegan diet. It will be high in glutamate, especially the soy sauce-based products. However, I see no harm in eating a little meat — especially organically raised chicken or turkey. It should play very little role in heart disease. Animal fats have been shown to have very little effect on atherosclerosis.

The main goal is to reduce blood vessel inflammation and free radical/ lipid peroxidation levels. This means consuming a mixture of powerful antioxidants and anti-inflammatories such as curcumin, quercetin, ellagic acid, natural vitamin E, buffered vitamin C, hesperidin, and vitamin D3. Magnesium is also essential. It is important to avoid excitotoxins and oxidized oils such as corn, sunflower, safflower, peanut, soybean, and canola oils.
